But first, you must make an awesome guacamole for him to enjoy WITH his Avion Tequila, preferably Anejo, a more aged and mellowed tequila.

Father's day is this Sunday, and one of the easiest, last minute gifts to bust out and surprise the old man with is a fine bottle of tequila, it goes with everything, and can be imbibed neatly for the fast track to Margaritaville.

Meet our newest little friend: Avión Anejo (Gold Medal Winner at the San Francisco World Spirits Competition in 2011), an aged tequila, spending two years in American oak casks.

But first, you must make an awesome guacamole for him to enjoy WITH his Avion Tequila, preferably Anejo, a more aged and mellowed tequila.

Mega Fabulous Guacamole Recipe

All you really need for guacamole are ripe avocados and salt. After that, the next most important ingredient is FRESH lime juice. Then comes the cilantro, chiles, onion, and some chopped tomato on the side (it makes the guacamole watery).

Important, the chop order is crucial, please go small to large. Chop/mince garlic first, then Jalapeno, then onion, then cilantro, and bathe in lime juice, salt, pepper and add avocado last.

Ingredients

2-4 ripe avocados
1/2 red onion, minced (about 1/2 cup)
1-2 jalapeno chiles, minced (we like the seeds)

*5 tablespoons cilantro (leaves and tender stems), minced (unless you hate cilantro- you can omit it or reduce amount)   

Juice of 1-2 limes
5-10 cloves garlic
1/2 teaspoon coarse salt
A couple of hefty grinds of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Serve with tortilla chips.
Method

Chop and mince garlic, then pepper, then onion into uniform minced bits, bath with lime juice and salt and pepper set aside.

Cut avocados in half. Remove seed. Scoop out avacado from the peel, put into minced garlic, onion and cilantro.

Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be chunky.)

Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

Okay, now you can bust out the Anejo and get mixing:

Avión G5

2 parts Tequila Avión Anejo
1 ¼ part Elderflower Liqueur
½ part Fresh Lime Juice
Splash Grapefruit Juice
Splash Club Soda

Shake first four ingredients with ice. Add splash club soda to shaker, and strain into a chilled cocktail glass. Garnish with a mint leaf or cucumber wheel.

The Weekend Escape

2 parts Tequila Avión Anejo
1 part Fresh Lime Juice
4 One-Inch Cubes Fresh Watermelon
Squeeze Agave Nectar

Muddle watermelon with agave nectar in a mixing glass. Add remaining ingredients, and shake vigorously with ice. Fine strain into a chilled cocktail glass, and garnish as desired.

Old-Fashioned Cocktail

1 Sugar Cube
1 Marchino Cherry
Splash water
Muddle them all
2 oz Avión Añejo

Rim is rubbed with orange zest
Add orange rind to cocktail...

Blood Orange Margarita

1½ oz. Tequila Avión Anejo
¾ oz. Cointreau Orange Liqueur
1 oz. Blood Orange Juice
½ oz. Fresh Sour Mix 

In a cocktail shaker add all ingredients with ice. Shake and strain; best served over fresh ice and garnish with an orange twist.
