This painting is not painted with Caravaggio type (mixed) red, and is painted with Stanzioni type dark (standard) red. It is extreme to consider Caravaggio would paint more than one version of the same painting with a more manly face, although there is a website which shows a different version of the 'Supper at Emmaus' which does have a mixed red color known to be used by Caravaggio as his signature, according to Professor Merski.
My family owns a painting 'Pennitant Magdalene', which does have similar mixed-red color. We would like to speak to Mr Freches about his expertese of our painting, if there is a contact address avialable.
